Cheesecake Snickerdoodle Bars

Snickerdoodle cookies and cheesecake are both great on their own, but combining them into one dish just made choosing between the two an issue of the past.

A delicious snack or dessert to try at home. This recipe takes about an hour to make and is super simple for just about anyone to bake. The original recipe can be found on delish.com.

Ingredients needed for the dish (measurements are stated later):

  1. Blocks of cream cheese (softened)
  2. Sugar
  3. Eggs
  4. Vanilla extract
  5. Kosher salt
  6. All-purpose flour
  7. Salt
  8. Baking soda
  9. Sticks of unsalted butter (melted)
  10. Brown sugar
  11. Cinnamon sugar (mix of plain white sugar and cinnamon, will be used for sprinkling)

Get to baking:

Start by preheating the oven to 350° and greasing the baking pan, by method of choice, to prevent sticking.

Begin the recipe by preparing the cheesecake mixture.

Precise measurements for cheesecake:

2 blocks of cream cheese (softened)

½ cup of sugar

2 eggs

½ teaspoon vanilla extract

Pinch of kosher salt

Steps:

  1. In a large bowl add the blocks of cream cheese and sugar and beat until a fluffy consistency is formed.
  2. Then add the eggs, vanilla and kosher salt to the bowl and continue beating until all ingredients are combined.

Move on to preparing the snickerdoodle dough.

Precise measurements for snickerdoodle dough:

2 ¼ cup all purpose flour

1 teaspoon salt

½ teaspoon baking soda

1 ½ sticks unsalted butter (melted)

1 cup sugar

½ cup brown sugar

2 eggs

1 teaspoon vanilla extract

1 ½ teaspoon ground cinnamon

Cinnamon sugar

Steps:

  1. In a medium bowl add the flour, baking soda and salt and whisk together until evenly combined.
  2. In a separate bowl beat together the sticks of butter, sugar and brown sugar with a hand mixer for about three minutes or until mixture is pale and fluffy.
  3. Add the eggs and vanilla to the mixture made in step two and mix until the ingredients are combined.
  4. Once the butter, sugar, eggs and vanilla mixture is complete, gradually add in the flour mixture (made in step one) to the bowl and and mix until dough is formed.

 

Combine the cheesecake and the snickerdoodle dough.

Steps:

  1. Press about two-thirds of the snickerdoodle dough into the bottom of the pan, make sure the pan is layered evenly.
  2. Sprinkle cinnamon-sugar (mix of plain white sugar and cinnamon) on top of the dough.
  3. Pour the cheesecake batter on top of the dough and spread evenly across the pan use a rubber spatula.
  4. Break up the remaining third of the snickerdoodle dough into small clumps and and disperse over the top of the cheesecake layer.
  5. Finally, add more cinnamon sugar on top of the last layer of snickerdoodle clumps and place pan in the oven.
  6. Let dish bake until the edges are set and the middle of the cheesecake mix is only slightly jiggly (about 35 minutes). Let cool completely before serving.
