How to Bake: Kropsu

Finnish baked pancakes, also known as Pannkukkau or Kropsu.

Kropsu is a Finnish baked pancake. This dish is typically served with syrup, berries, sugar, whipped cream and dusted with powdered sugar for a traditional Finnish breakfast meal.


  • Four eggs, beaten well
  • One cup of flower
  • Two cups of milk
  • Two tablespoons of melted butter
  • Three teaspoons of sugar
  • One teaspoon of salt


  1. Alternate adding the flower and milk to the eggs as they are mixed in a bowl.
  2. Add all the other ingredients while continuing to mix.
  3. Spray a 7×13 inch pan with non-stick spray.
  4. Cook at 425 degrees for 20 minutes (Kropsu will rise during cooking, and fall shortly after).
