Brownie+Stuffed+Chocolate+Chip+Monster+Cookie

This week I made chocolate chip cookies stuffed with a brownie. It was very easy to make! I did it a little differently than the recipe. Instead of a mini muffin pan I used a regular muffin pan. I then cooked the brownies for ten minutes at 345 degrees Fahrenheit convection bake. The brownies were slightly cooked but still gooey. I then put a large piece of cookie dough in my palm and spooned the brownie into it. Then I grabbed another piece of cookie dough and place it on top of my palm and rolled it together. I fit four on a cookie sheet lined with parchment paper. After they were in the freezer for an hour, I cooked them for 30 minutes while checking them every five minutes. They were a hit! My family, lunch table and the Tom Tom loved them!

Brownie Stuffed Chocolate Chip Monster Cookie

Ingredients

FOR THE BROWNIES

18 oz box brownie mix and ingredients to make it

12 oz chocolate chips

FOR THE COOKIES

2 cups butter softened

1 cups white sugar

2 cups brown sugar

4 teaspoons vanilla

4 large eggs

2 1/2 teaspoons baking soda

2 teaspoons salt

6 cups flour

2 bag(s) chocolate chips

Directions

  1. For the brownies, make according to box directions. Stir in chocolate chips. Preheat oven 350 degrees. Spray two mini muffin pans with cooking spray. Fill the muffin tins half full and bake ten minutes Remove and let cool then scoop them out of the muffin pan and set aside.
  2. For the cookies: In a large bowl beat the butter and both sugars together. Add in the vanilla and eggs. Beat until fluffy. Beat in the baking soda and salt. Add the flour and mix well. Stir in chocolate chips.
  3. Place the chocolate chip cookie dough around the brownie muffin and shape it into a big ball. Place on parchment lined baking sheet. Repeat until all cookie dough is used up. You will probably have left over brownies. Place in freezer and allow to freeze for one hour.
  4. Preheat oven 350 degrees Bake the frozen cookies about 15 minutes or until browned.
